Vines are grown with the guyot system on a rocky soil located in a hill area at the North of the province of Taranto; this land benefits from great diurnal temperature variations that are good for an optimal accumulation of aromatic compounds.
First week of September.
By cryomaceration in the pressing machine for 24 hours. Alcoholic fermentation in stainless-steel tanks at 11° C.
In stainless steel tanks.
A wine that preserves its organoleptic characteristics for 2 years.
Light straw yellow colour with bright green reflections; it reveals some fragrant flower and honey notes, together with fresh exotic fruit scents. Its taste is definitely acid and supported by a balanced softness.
Best served with:
Ideal with sea food: mixed starters, raw shellfish, first courses with light fish sauces.
