Hilly area at the North of the province of Taranto that benefits from great diurnal temperature variations. The soft soil layer is clayey and quite thin, with a good presence of rocks.
Last week of August.
Cryomaceration in the pressing machine for 6-8 hours followed by soft pressing of the grapes, cold static decantation and alcoholic fermentation at 11°C.
In stainless steel tanks.
A wine that preserves its organoleptic characteristics for 2 years.
Light straw yellow colour with bright green reflections; it reveals some fragrant flower notes, together with fresh tropical fruit scents. Its taste is definitely soft, lively in acidity and supported by a good sapid structure.
Best served with:
Ideal with sea food: mixed starters, raw crustaceans, first courses with light fish sauces.
Serving temperature: About 12-14°C.
