Red vine varieties typical of the Salento area.
Vines per ha:
4500 bush vines.
San Marzano, Salento, Puglia. Vines are grown at an altitude of around 100 meters above sea level. The soil is clayey and not very deep, with a good presence of rocks. Medium/high temperature in summer, with good evapotranspiration.
Over 50 years old bush vines, with 4/6 buds per plant and an average production of 1 kg of grapes each.
Hand-harvest of lightly overripe grapes; destem-ming and crushing; Cold pre-fermenting maceration; alcoholic fermentation with autochthonous yeasts. Final drawing off with soft pressing machines.
Malolactic fermentation in stainless steel tanks; ageing in fine French wood barrels for about 12 months.
A wine that preserves its organoleptic characteristics for 7 years.
Ruby red colour with purple reflections; intense and complex bouquet with fruity notes of prune and red jam and spicy scent of vanilla and licorice. Intense on the palate, full-bodied and soft with a long aftertaste.Best served with Red meat, game, savoury firs courses. Meditation wine.
