Vines per ha:
5000 bush vines.
Very old vineyards, selected in the towns of San Marzano and Sava. The soil is mainly “red earth”, with a fine texture and a generally calcareous undergound with few emerging rocks. The well-known redness of the soil is due to the presence of iron oxides. The climate is characterised by high temperatures all year round, very little rainfall and a wide temperature range between night and day, which has a positive influence on the quality of the grapes. This is the d.o.p. ”Primitivo di Manduria” production area.
Beginning of October.
Grapes are hand-harvested, after withering on the plant. Maceration: 10 days with selected autochthonous yeasts. Thermo-controlled alcoholic fermentation at 24-26° C.
12 months in fine French and American wood barrels.
A wine that preserves its organoleptic characteristics for 7 years.
Intense ruby red, with garnet reflections; persistent and complex to the nose, with notes of mature fruits which recall cherry jam and dry figs; slightly spicy. The full body gives the mouth some pleasant honeyed sensations, supported by a good acid structure.
Best served with:
Meditation wine. Excellent with dry almond cakes, fruit tarts, savoury and matured cheeses.
